Pre-timeskip almost always focused on the Strawhats. Post-timeskip focuses far more on side characters that are only relevant for that arc.
The manga was more simple and feel more like an adventure back then.

One Piece was better with a smaller crew of similar aged characters. The relationship dynamics were more natural, it was young people trying to find their way through the world.
Peak One Piece was Water 7, when the final crew member was Robin.
if i had to pin down why some people feel this way it's a lack of completed smaller story arcs with the fun big endings and the variety of locations/characters that come with that.
while i do miss that too i have completely enjoyed dressrosa and the adventure in totland and seeing where the greater story is eventually tied together which is what is largely responsible for squeezing out the smaller stories.

Because it was an arc every 2-3 months instead of every 2-3 years.
Focus on main characters instead of running around with dozens of badly-developed strangers.
Because you were younger pre-timeskip, which clouded your judgement, as does nostalgia now. The timeskip introduced a break in the narrative that allowed you to separate what came after from what came before, and see that newer stuff without nostalgia goggles. You see pre-timeskip as the child you were when you first saw it and you see post-timeskip as the adult you are now.
