scots is basically early middle English that didn't evolve, though there is more to it than just that.
no one knows exactly when the older English came to Scotland. it arrived in the south east in the 7th century and the northumbrians obtained the best farmland in Scotland, or at least ruled it since their is no proof the welsh disappeared from their until maybe the 10th or 9th century, in Lothian. eventually somehow it spread out there after being conquered by Scotland. so just before when the kingdom of England formed the gaels obtained this land and then the language spread, likely due to the new burghs being set up. though the people never did as the town records show them being diverse. so the languages developed in 2 different countries which caused them to separate til the point they became separate enough to be mutually unitelligble around the 15th century. essentially as far as Portuguese from Spanish.

interesting, I suppose it's not surprising then that it reminded me of middle English. Out of curiosity did the nobility of the kingdom of Scotland primarily speak Scots? I assume they still spoke Gaelic language when it was the kingdom of Alban since it developed out of the Irish settlers and adventures in the region, but I don't know when that changed
I disagree with the idea that gaelic arrived into Scotland through Ireland but that doesn't matter here anyways...
It depeneds on the time period
from the 9th century until the late 13th all the kings spoke gaelic as a first language with the language of nobles depending on who they ruled, so a ruler in Galloway would speak gaelic and in fife scots, it never was really like England where the nobles spoke a completely different language. although this did happen for a short amount of time at the 12th century after immigration from france. but by the 14th century Scotland shifted away from gaelic and towards scots because the scots speakers were the majority of the population it was natural to happen. the last ruler who could speak gaelic was mary and after her no one could or wanted to. the last scots speaking king was Charles the first.
I see, forgive my ignorance I can't say I am all that well informed since I was pulling that from the general gist of Scottish history that I remember off the top of my head. What resources are there available for learning Scots and Scottish history that you might recommend (if you know any)

a great book for scots is "The Orygynale Cronykil of Scotland" by Andrew Wyntoun as it preserves the best quality scots you will realistically find. although the material itself isn't incredibly high quality it is very good scots. even though it is from the 15th century the scots is used there is still useful for more current scots, but the words how they are written then are said differently now. I recommend the david macpherson edition.
more modern texts are available like the new testament but I find these sort of poor scots with too many English words but it still would help immensely.
