Hmm, seems very economical to me, dried stuff is typically very cheap. What's the typical cost from your grocery trips? Is fresh a must, or are you fine with frozen/canned? What about organic foods, are they worth the markup in your opinion?

I love a good soup, but variety is something I crave as well. Do you have anything you make when you feel like something different?

Coordinating the two methods is best. That's the principle of good cop bad cop routines. If you're only conciliatory people just "agree to disagree" and ignore your points. If youre only aggressive people get angry.
You need to be aggressive enough to shake them out of their apathy, and provoke them to have emotions about the issue. Then you offer them a chance to talk it out, to justify themselves to an understanding person, and they jump on it.

I don't talk to anyone about it unless they are close to me and genuinely want to know. People who want to have a debate usually already have their minds made up and want to change your mind, like you want to do.
Just work out and try to be a respectable person. I have gotten 3 people to go vegan just by being vegan. I took them to a vegan restaurant and there was a positive discussion about how nice vegetables are. If you go to a steakhouse with people and start talking about veganism people will see you the odd one out and "just want to enjoy their steak," they will automatically go against veganism.
People don't care about facts and logic, just talk to them like people

ive been buying a lot of tofu lately like, A LOT, so its kinda expensive, so maybe 40$-50$ a trip once a week. but if i dont eat any processed foods, i can live on 100$ a month easily

depends on your budget. im broke so i dont buy it. if you can afford it, why not

i used to eat a lot of canned food, but canned food has tons of BPA in it, which is an obesegen, and is banned in some countries. they have to use bpa, so i avoid it. frozen i eat a lot, my freezer is stuffed full. they freeze vegetables the moment they are picked, a lot of times they are more nutrient dense than fresh vegetables
