Yes my favorite anime is from the '80s and '90s. Gaogaigar is also great. I really enjoy the look and coloring style of cel animation.
I grew up watching pre-2000's anime. Actually, I strongly believe anime died after 2000
only one I know is Cowboy Bebop but I'm sure you've watched that already

Few things can match the artistry of cel animation. Seems like the industry is going in a bad direction with everything becoming low effort CG.

Angel's egg (1985) is a must watch if you are into artsy and symbolic imagery. The whole film has only a 5 minute dialogue but the atmosphere is beautiful enough to keep your attention I think. Also perfect blue (1997) is pretty good!
there's a lot of good stuff in the digital age, hard to beat oldschool cel stuff
evangelion / serial experiments lain are essential pre-2000s Yas Forumscore popular series though
yu yu hakusho / rurouni kenshin are my favorite pre-2000 shounen
perfect blue / angels egg are some popular movies
Stuff like legend of the galatic heroes, fist of the north star, gundam are boomercore stuff
My all time favourite is Crest of the Stars which is cutting it close, but some others I've enjoyed are Lodoss and World Masterpiece Theater anime. I enjoyed some OVAs too like Assemble Insert, Dream Dimension Hunter Fandora, Mad Bull 34, and Hello Harinezumi.
Everyone should check out Armor Trooper VOTOMS
Votoms is great, I have watched it a couple times (I like how it is broken into the four arcs so it does not get stale). I also like Armor Hunter Mellowlink.

Mellowlink is amazing. The way he tactfully takes down his opponents in every episode is very satisfying to watch.

It's a sci-fi military romance kind of anime, I absolutely love it but unfortunately it's almost lost to the sands of time, a damn tragedy. Completely out of print, chances of a remaster never, though it does have an ongoing (?) manga so there's a glimmer of hope knowing that somebody out there wants it to survive.
Phantasy star online is a pre wow mmo that is a celebration of every 90s scifi anime stylistically blended into one setting
I'm rewatching LoGH right now.
For some reason people tend to think 2000-2010 was the worst time for anime, but personally I almost exclusively watch anime from that decade, and of course the 90s. The 80s seems to be big for people right now which is hard for me to get into because the animation consistency just wasnt there yet. I'm very visual and I find the weird clunky movements and high rate of poorly drawn frames to just be too much for me. Modern shit is way too fucking pastel for me.
Related, if I wanted to get into the Gundam series, where should I start? It seems like there are a ton of spinoffs

I believe they're just a minority, I haven't seen many criticise the early 00s outside of some shoddy animation, but even than there are a lot of stylistic anime, as for the late 00s its just a few vocal people who hate moe anime like Haruhi and Lucky Star.

I watched the original black and white astroboy when i was 4 in my shitty 3rd world country. i used to larp as astro boy and my older cousin would be the professor, good times.
The mid 90's Berserk adaptation is pretty good and accessible - not any 2deep4u stuff and it's just a solid show
The only gripe I have with it is that it ends in the middle of the eclipse. Probably the biggest "fuck you, now read the manga" ending I've seen.

Been watching YYH, I didn't actually watch it as a kid so there's no real nostalgia factor and yet I still think it's very solid and holds up well.
Planning on watching LoGH soon since I've seen everyone jerk it off since the dawn of time. I'm not generally into politics so not sure whether I'll enjoy it or not.

I've someone who makes me watch old anime and old japanese films, some of them I enjoy like GTO and Young Onizuka. Oh yeah, when I was a kid I was watching Shaman King.

GTO was great. I didn't think I'd like it, but it was a lot better than I expected. Is there anything else out there like it?
The manga has tons of sequels and spinoffs, one of which is even on-going. But if you want something that's strictly an anime, I recommend Gokusen and Jigoku Sensei Nube

Not really, but the final volume of the manga was never adapted so you could probably check that out if you want a more conclusive ending

Hmm let's see, recently I've been thinking about rewatching Tenchi Muyo! GXP. I like the funny gags from pre-2000's anime and the art style as well. They were full of SOUL.

Yeah. Films and OVAs at least. Most TV anime has unbearably cheap animation and bland art. Stuff like bubblegum crisis and megazone 23 oozes quality and ambition, especially the former when it comes to music. The anthologies like robot carnival and memories also have some of the best directed and produced animation produced at that time. Closest think we've had since would be the animatrix.
