blacks, for long periods of american history, really only had access to the lowest quality of meats. they had to either hide the taste in a fuck ton of spices (the hot sauce meme is a stereotype for a reason) or by cooking it in various ways. fat frying low quality meats became a common practice to make poor quality and outdated meats edible, and since many of them had bread that was often super stale and otherwise inedible the frying process allowed them to use that bread for something.
no idea where the watermelon thing came from, but i'm guessing it was either considered a trash fruit in certain regions during or before the jim crow era or watermelon was just a cheap option that they could snack on.
