If you want to really enjoy meal prep, invest in a smoker, preferably a small offset. I smoke a pork shoulder every week and portion it out, and the smoke flavour really does make a huge world of difference, it's lovely. Use it for tacos, with your eggs in the morning, on salads. Smoking whole chickens for the week really does wonders too.

Usually for low carb meatballs I just use beef, seasoning, eggs, parm cheese, and pork rind crumbs for breadcrumbs.

Go low fat. Literally, avoid any meat that isn't chicken breast. You should be able to easily eat twice as much as you would if you had your regular amount of fat in your diet.
