If you want to really enjoy meal prep, invest in a smoker, preferably a small offset. I smoke a pork shoulder every week and portion it out, and the smoke flavour really does make a huge world of difference, it's lovely. Use it for tacos, with your eggs in the morning, on salads. Smoking whole chickens for the week really does wonders too.

This looks really good but I'm surprised by the cottage cheese. What exactly does it do to the texture?

Usually for low carb meatballs I just use beef, seasoning, eggs, parm cheese, and pork rind crumbs for breadcrumbs.

>dump in 1/2 cup balsamic vinegar + 1/2 cup water + thyme
>15 minutes pressure cooking
>5 mins under pressure

pork tenderloins are cheap as fuck and the bite size medallions will fall apart in your mouth, i roast vegetables with this dish all the time.

I’ve just moved into a new place that has no kitchen stuff except for a countertop stove, no oven, no microwave. I’ve bought a pot, a toaster and a frying pan, what are some other kitchen essentials I need that could make my new cooking life easier? Go low fat. Literally, avoid any meat that isn't chicken breast. You should be able to easily eat twice as much as you would if you had your regular amount of fat in your diet.
