The base game's levels are worse, but user made wads are better.

Considering the way the ID Software guys worked, the crazy speed they delivered and the fact that they were literally inventing level design in a new genre, Doom 1 and 2 are practically miracles. It was to be expected that there was no redeeming factor besides the novelty, but some original maps of these games are still fun.
Doom 2 has the merit of having expanded the enemies almost perfectly. Thanks to that, even today, 20 years later, there are still vanilla maps being made and they are excellent and present new situations even for veteran players.
Finally, John Carmack has always been sympathetic to the hack scene and he purposely made the game user-friendly for modifications. Doom was made with mods in mind and everyone who disdain the original game by saying that mods and user maps should not be considered has no knowledge about the game.

Bad game is an overstatement, but it's a very mixed bag. The biggest problem being stupid gimmick maps like the courtyard and barrels of fun, or shitty city maps.

Doom II's first 11 maps are great and its last 10 maps (and 2 secret maps) are quite good as well. If the game was just the Earth Bases + Hell + Wolf3D levels it would be better than Doom outright in that department. It's just that M12-20, the city levels, almost entirely suck dick relative to the other maps in either game. Doom II's enemy variety and Super Shotgun make it the better game overall though, by a small margin.

Heretic is better than either game.

How the FUCK do I get better at Eternal? I use the frags,meat hook , flame belch, dash as much as I can, and try to utilize enemy weaknesses, but I'm still getting my shit kicked in on Hurt Me Plenty. How do I get good?

Don't even bother with enemy weakpoints unless you're trying to just quickly neutralize and ignore them while focusing on higher level threats. Most enemies will go down with a couple rockets and ballista shots, you should be using those as your big damage dealers, automatic weapons for suppression, and the super shotgun for mobility and recovering armor, as well as letting out some quick spread damage if you can't aim precisely in the moment. The biggest keys to the game are moving and drawing the enemies you want to kill out of the horde without getting overwhelmed by them, and using the environmental design to funnel enemies into good areas to ambush them in without being fuckin' swarmed.
