It was still a beautiful moment for me as a kid. You reach adult Link and while you're still reeling from the devastation of Hyrule you get hooked to Saria, the first link to your whimsical childhood, and she's in danger. I rushed in and saw how monsters have taken over everything. The road to the temple was more perilous. All the while my emotion to save her drove me onward. Then you get through the shitty temple and fight the boss and she awakens as a sage. It was in that moment, for me as a child, that I knew that it was never going to be the same again from here on out. I had to let go of the past, and let go of her, and complete the duty that was set before me. I had to not only adapt to the changes around me, but embrace the hardships as adult Link to become stronger, and to slowly save the world piece by piece. After I left the Lost Woods I saw the game in an entirely new light. My crush was gone, but my resolve was greater.

'Kokiri village/childhood friend/marry your waifu and live in an idyllic rural community' simulator does not exist.

There can't be dating sim elements in OoT because that runs counter to Link's journey being innocence lost and sacrificed time to fulfill his destiny. Link had his childhood and young adulthood stolen from him for the sake of his country, and Zelda returning him to the past at the end presented another problem: He was now mentally an adult in a child's body, and so could not return to live out his childhood as Zelda wished. He was too changed.
