If you're into gameplay-focused JRPGs, Ys is perfect. Most of the games in the series are good, even the party system ones.

The story is whatever, I really like the Org XIII fights, battle system and music.

Just play some 2D Tales. Swordcraft Story is basically a knockoff of those anyway.
Doesn't scratch the same itch. Swordcraft has more weapon types and crafting involved, gameplay felt nicer because there was one character on the screen and it didn't feel like a clusterfuck.
That being said, I only played Phantasia and Narikiri Duneon X. Played some Eternia too but couldn't get into it too much.
It's a pain in the ass, the navigation can be clunky as shit sometimes, and occasionally you'll feel directionless - but goddamn, I just love it so much either way.

Is SaGa the one where you play the descendants of MCs and the like? Maybe Suikoden will scratch your itch.
SaGa clones like Genius of Sappheiros/Tendou Blade, Legend of Legacy/The Alliance Alive are the closest you'll get.
Otherwise you have to give up something in terms of mechanics of general design, plenty of games drew inspiration from SaGa, while other franchises were created with similar ideas regarding certain design choices, Metal Max for instance is a series that shares a lot of the fanbase with SaGa games because it has the same open ended progression and general narrative.
I've never played FF8, is it worth getting for the switch? The only mainline final fantasy I've played to completion is 1 but I liked the tactics games and crystal chronicles.

how do some of you guys mange to finish your JRPG backlog in a matter of weeks?
These games typically last 30-60 hours.
Even going at a rate of 2 hours a day, that would be 2 weeks to a month at most.
Most people get more invested than that and can spend some days playing 6-8 hours with breaks. Especially more so now with quarantine. Just find a game with fun gameplay and a decent story and you won't even feel the time pass by the time you're done.

I've been playing Digimon Cyber Sleuth a lot as my first actual Digimon game, but something that it's bugging me is that you could replace the digimon with SMT demons and not a lot would change

I wouldn't really say it's worse on *everything* except for presentation. You gotta give 'em credit for making negotiation an actual thing again, with the addition of a full elemental set rather than just the basic-ass, slimmed-down one in P4.
But that aside, yes, hit the nail on the head - autismal visual/audio quality did more for it than anything else.
Ys 8 is awesome, combat is like darksouls but actually fun also there are no retarded mob respawning unless you reload whole area, ost is 10/10, story and characters are also pretty cool

Lack of good JRPG's and snoy exclusivity has made the snoybois latch on to it and make it their poster child. If P5 or P5R ever get ported, expect the snoys to turn their back on it.

Also why is it that only two games in this series (soul hackers and strange journey) give you a way to force accidents easily during mid-late game? I'm just not feeling the reload RNG chance that happens for several other games without it, like full moon or sick/dead statuses

PC because game renders by default at 1800p, also i'm using reshade to make game more colorful along with smaa
Soul Hackers and SJ had accident exclusive demons so they had the foresight to make them possible to obtain without one million resets
4 was a clusterfuck of bad design decisions and removing forced fusion accidents while keeping accident exclusive demons was one of them. 4A did the bare minimum to make it better because they were still retarded when making it
In the rest of the franchise you don't really want fusion accidents, but they can go well sometimes
