What exactly were people expecting and wanting out of this remake? How was it supposed to come out?

I think 80-90% wanted it to just be FF7 in better graphics with a few more areas to explore and a bit more sense in the cutscenes/dialog.
What they got was shitloads more exploration than bargained for (not a bad thing), and extremely different cutscenes and story (not the best thing). The latter is why they're fucking furious. It's like if George Lucas did a remake of Star Wars New Hope but Luke meets force ghosts, goes to the Death Stars without meeting Obi-Wan so he never dies, escapes a totally different way, the rebels blow up the Death Star and Force Ghosts and luke have a fight where him and Obi-Wan "free" themselves from having to be in the plot of the other movies.
You can imagine how well that'd go too.

Exactly what i got. If the story would stay the same i would've just played the original which was even the full game and i don't give a shit about graphics. Now with a new story im going to buy it.
