They're all well made, with catchy tunes, and fake languages that are catchy. They make for good background music.

I was in the same situation as you until I played the game. They blend very well with whatever is happening and play at very key moments that make you associate that song with those moments. Like just hearing the different versions of the City Ruins music takes me back to those exact moments when it first played.
Just because you have shit taste in music doesn't mean everyone else does. I like Nier's ost too but there has been lots of good video game soundtracks in the last 10 years.

While I like the music, it's not the absolute best thing I've ever heard. I theorize that so many people gush over it because it sounds unique to them. They don't recognize the classical music that inspired it. Uematsu is an extreme. His songs are either 10/10 fucking amazing or they're forgettable. Not much of a middle ground. And I attribute this to him trying to write so much music for each game. He admitted that he had multiple burn outs and mental brteakdowns because of such a high workload on Final Fantasy VI, VII and VIII. And if you notice, all the stuff he's done since FFX, he only writes about 1/3 or less of the music for those games. Sometimes only just one song, like with Final Fantasy XIV and the Ah! Megami sama movie.

It's fairly easy to reference they old standbys from the SE family or konami or arcsys or whatever known names, so I was trying to think of modern day "indie" games that have done some great music, and I'm having a fairly hard time. I can think of a few games with one or two good pieces, but nothing stand out overall.
In terms of doing something unique though, like op asked for, the one game that came to mind was dead cells, while not really stand out, the character of the music is fairly unique for vidya. Admittedly it's not a new style of music in the absolute, but it's something different.

some of them are catchy but it's mostly because it captures the atmosphere of the environment really well. which is why most video game music sounds shallow or incomplete, it's supposed to add to the game not function on it's own
Masashi Hamauzu kinda shits all over Uematsu IMO. has albums that are easy to listen to out of context. I can listen to the FFX or Musashiden II album just lounging around the house. I think people hype Uematsu purely out of nostalgia. I mean, Uematsu is a great composer, but Hamauzu is just straight up better, and gets shadowed in popularity.
