Once you reach The End, an Enderman gravity mob grinder is probably the easiest one to make. You just need to get an Ender Mite into a minecart with a hole underneath it to cause fall damage. I know what you said in the OP but having stacks of them is lots of fun and you'll get tons in a matter of seconds

Anyways I've been thinking about where I'm going to build my base for 1.16
You have the crimson forest with piglins for bartering but hoglins are so fucking strong with twice the health as a player and spawning in packs.
Warped forest is full of fucking endermen.
The soul sand valley is full of ghasts and needs the new enchantment that kills your boots.
I could just build in the old nether but that beats the point and it also has fucking ghasts in it that could blow up my base build.
