Why is it so hard?

Too many ways to mess up your build. Make sure not to put any points into stats that aren't you main kill stat and Wits. Use Loremaster to examine the enemies in the area to see how much Wits they have and get more than them. Initiative is important, getting to act first is always the better option because being able to kill an enemy before they act makes any battle so much easier so I recommend starting with 12 wits at character creation. Only have Constitution for your shield's minimum CON requirement.

Also there's so many skills that feel mandatory after you've got them.

What exactly are you finding difficult?

It’s not that difficult if you build right, think ahead, and utilize element combinations in a tactically sound manner

Holy fucking shit, just do Lone Wolf and make either two two-handed fighter characters or else a two-handed fighter and an archer. That's it. That's all you need to break the game. With that build, you can literally do the port battle at Fort Joy without any planning or subterfuge. You can brute force your way through the entire game.
