Start from the begining, play RE remake first, don't play then originals unless you like the tank control option in REmake.

RE4 is good anywhere, widely considered one of the best games ever made, it's pretty good
RE5 is worth a playthrough as well as mercs, bring a friend for maximum fun
re6 is just shit unless you have a friend, mercs is stupidly good
re7 is just re1 with less enemies and in first person, pretty good game
If you still like the series after this, then you can try the revelations spin offs and re0. If you want a more fun shooty thing try the light gun games on the wii, if you liked the tank controls on remake, play the og games at your leisure.
