I got filtered hard and gave the game up (despite really enjoying the combat and movement) and I think the problem is that if you try to play it as just an action game, it's brutally difficult, and you have to play it well as an RPG (listening to NPCs, learning the environment, etc. so you can find tools and techniques that exploit weaknesses or sneak past optional fights that are designed to be super hard) to stand a reasonable shot without just being a fucking master of parry timing.
I couldn't break myself of the habit of running directly toward everything that had a health bar and not moving on until it was fucking dead, not stopping to do anything else.

According to Steam achievements about a third of owners beat Sword Saint Isshin. If that's the case then it's actually the easiest by far.
Perhaps. I gave up at Isshin. Killing Genichiro every fucking time got to me after a while. Demon of Hatred was great though
And according to Xbox achievements, only 28% of the players could beat Genichiro at the top of the castle
The combat is super forgiving dude, a perfect parry is 30 frames (in dark souls a parry is around 6 frames)
You don't have to parry all the time, blocking works well also
