They hit similar beats but their arcs are still vastly different and this still follows the aspect of Sieg having nothing to do with his life. At the risk of sounding reductive, Shirou does what he does on pure instinct because he thinks and believes literally everyone else is more important than himself. Sieg, on the other hand is intentionally putting his life at risk for the people he cares about because he thinks that will give him the value he's looking for. In later volumes, it becomes apparent that he's personally devalued his own life to the point he's just trying to die for whatever passes as a 'higher purpose' until Jeanne and his eventual fight and ten page long talk with Karna finally snap him out of it.

Exactly what you'd expect from a homunculus without any sort of life experience. Apoc's crime wasn't Sieg per se, but giving him way too much focus. If he were doing his thing in the background I wouldn't have minded him so much.
