The answer is consistency. You can have story with magic and it can still be internally consistent. You can't do the same with robots. Any attempt to justify mecha is doomed to fail for exactly the reasons covered in my op.

Legitimate complaints are the high target profile and the fact that they would cost a gorillion dollars to manage, but so would any high-tech weapon with a huge tactical advantage

What about the intimidation factor? That one warlord in ghana made mechs in real life as a propaganda piece (see pic related) and the same thing can happen in universe. If all you're doing is mowing down a bunch of unarmed civilians a mech does nearly as good of a job as a tank would but is way more intimidating and gets the message out.

They get around that by having mechs be immune to conventional ammo. Tanks usually can't penetrate the armor. Too fast to snipe, etc.

Half of those is easily answered by "jets are so fast that it doesn't matter" (which does not apply to mechas), and the other half is just wrong. Not all jets have a single engine and a crew of one, not all jets are launched from aircraft carriers, etc.
But above all, fighter jets and tanks occupy completely different niches on the battlefield, whereas mechas are supposed to be a replacement for MBT. The intended comparison is just inept.

You need to make them capable of tanking as many missiles as possible and as much thermite based rounds as possible, they can't out run shots fired at them so need a nigh endless way to render typical munitions useless (kinda impossible until magical shields). War is done at extreme distances, so tanks etc are just for occupying a location to show some kind of presence, because the war is in the sky (or on some boat/sub, technological (hacking etc/spycraft) or economic).

Mechs are rule of cool and because they stand in for humans, which is was so many are humanoid.

A cornerstone doesn't always have to be in the limelight, mecha served as a foundational element for anime very early on.
Many of the first serialized tv anime were mecha series.
The fact that even japan recognizes several of those as cultural icons speaks volumes.
That being said Gridman was still pretty big, and so were Promare and DitF.

Says who? Flag is still considered a mecha series, even the tachikomas and landmates in GitS are classes of mecha.
A lot of people think mecha is limited to stuff that either looks like a knockoff gundam or a megazord, but what's considered mecha is way more broad than that. Especially in japan since they sometimes tend to even use terms like "aircraft" when referring to mecha.
Generally the term's loosely applied to most mechanical design in fiction
And mechanical designers will often do more than just work on strictly giant robot designs. Ikuto Yamashita of evangelion fame has also designed a lot of fictional aircraft. Kanetake Ebikawa
