Grimgar is literally about a bunch of grunts trying to git gud.
Yeah it's styled as a MMO isekai but the theme is still there.

Issak is sorta close to that, except that it's full of "honorabu samurai most powerfuru warrior" bullshit.
Still pretty cool though.

It's been a while since I read it but wasn't there a part where he took several armored guys single handed?
Also he's one sharpshooter basically dictating all the battle he's in which is kinda pushing it for me. I get that snipers weren't really a thing but still.

Yeah, but he's targeting gaps and such, kinda unrealistic, but not the point where he's slicing plate armor off like in normal anime.

And he's killing enemy general, which to be fair, is revolutionary for the times, his gun wouldn't even be possible until two centuries more in Europe (with rifled barrel and mini-ball).
