In the ended, the question isn't really "was Joi's love real or not?". Deckard says it best when K asks if his dog is real. The answer is "Do you think it really matters to him?". Joi's love was real to K and that is what mattered. Deckard's love for Rachel was real to him and that was all that mattered.
