Amphibia isn't as heavily focused on mystery, but it does have an interesting story arc and similar comedic timing to Gravity Falls, i.e. it feels like an old school sitcom with jokes, and more importantly it has pauses to let you absorb them. This show has come closest to giving me the feeling of watching Gravity Falls, and it's good on its own merits.
Big City Greens also has similar comedic timing, but it's pure sitcom. It also doesn't become good until further into the season. You have to work at it, but it's worth giving this a chance.
Owl House tries hardest to imitate Gravity Falls, and also fails at it thoroughly due to the poor writing. But it does try to hit all those notes.
Are there any cartoons out right now that give the same feel as Gravity Falls...

I watched the first few episodes and Huey, Dewey and Louie did not capture my interest as MCs. I like Scrooge but not enough to put up with a show centered around those three AND him.

If you haven't watched it yet, OK KO is pretty fun and does have some interesting continuity regarding the main character and his villains. Almost done with it and I've had a blast going through it.
It occurs random, depending on the main subject of each episodes
It is incredibly worth the first few episodes.
