it still feels like to me they were intentionally mirroring Steven with Rose, having him go through stuff she never got the chance to work through herself with everyone learning she isn't a perfect angelic figure. "I'm a fraud." or at least that's what I want to think because it makes me feel a little better about the complete absence of Pink/Rose in the final episodes.

We never got much of a satisfactory explanation. I get the metaphor but Steven could only shapeshift into different ages before. Turning into a dinosaur with no control of his actions felt really out of left field.

At 15 seconds you can clearly see it's a diamond instead of a star. They really wanted to cocktease people who wanted Steven turning into Pink.
The reason is that Steven lost his mental image of himself, and no longer felt like a person. He saw himself as a monster, so he became one.
The issue with this is that he should have turned into his own idea of a monster, which is his mother. Earlier in the season it was even teased that Pink was more of a monster than we thought, with her having destructive powers and permanently scaring Volleyball, and Volleyball acting like a battered wife saying it's okay because she didn't mean it.
It would have been much more satisfying if Steven shifted into Rose/Pink. A constant flux between the two of them, and we get to hear Rose/Pinks voices. This part could be left up to interpretation. Is it really Rose/Pink still alive in there? Or is it Steven delusional and saying what he thinks they would say based on the shared memories he has with them.

First he turns back into younger 13-14 year old Steven, then when he tries to stop it he turns into slightly taller Steven, Baby Steven, Adult Steven, Middle Age Steven, Old Steven, cat fingers, Cat Monster, and when he thinks it's stopped he turns into Rose and Pink Diamond (or something in between) which finally makes him snap and turn into Kaiju Steven.
