Metal is pretty experimental. You just need to know where to look to find the experimentation. And it needs to be well done. Some bands "fuse" metal with other genres in such a way that they end up not really being metal with X genre influence but X with a superficial metal veneer. That's why nu metal, post-black metal, etc. suck. A prime example of this kind of thing would be Ghost Bath. Listen to them for ten minutes and you'll see that really they're not a metal band at all, but really a post-hardcore or post-rock band with a slightly black metal flavor.
Good genres to fuse metal with: harsh noise, power electronics, oi!, traditional hardcore, crust punk, folk, grindcore, dark ambient
Bad genres to fuse metal with: post-rock, post-hardcore, emo, rap, funk
Also, there's a lot of metal that's heavily experimental without really drawing on other genres. Experimentation doesn't just mean throwing different influences together. It can also mean coming up with something totally new not based on anything drawn from somewhere else.
