Because they can be cute and cuddly for 99.9% of their existence but if they are spooked, their instincts to attack kick in or any other external or internal factor that you can't anticipate they are fully capable of rag-dolling that baby to death before you can do anything about it and then it doesn't matter that they were nice and docile all the times before.
Nobody is claiming all pitbulls are in kill mode all the time. It can switch on unexpectedly though and there are more than enough cases of them killing babies and toddlers when it happens.
It really isn't a difficult concept. They are animals with a lot of power and more heightened fight or flight instincts than other breeds.
