Well, TBH, it will be pretty hard, if not impossible to find something that will just work connected to the internet and never need software updates. At least on a tablet or a chromebook the process is automated. Also, a chromebook is literally just the web browser, all the "apps" you use are web services (usually tied to Google). The Chrome OS also would have built in voice recognition that may help you.
