Every night, at a set time, the machine goes down for cleaning which can take about 4 hours. If you are there late at night, the machine has a good chance of being down for cleaning. It heats the cream up to over 100° to keep it clean.

We do not have that sauce. We've had it before. I kept about 8 for myself. The day we started offering it, we ran out before I got there to do my grave yard shift.
