Not him, but funny thing is most people don't realize American cheese is actually a mild cheddar made with added sour cream to give it a mild texture but sharp cheddar taste. It's really good. That prcessed stuff isn't really American cheese.

There are many kinds of cheddar cheeses, but American cheese was originally a Colby cheddar infused with sour cream. You can't really find it anywhere now, but if you do happen to come across it do try it out.

As a french , i know some cheese who can be eated by some lactose intolerant .
for exemple , the cancoillote , the somewhat liquid cheese here

you have many ways of creating cheese , and the cancoillote is made with whey , and it's why lactose intolerant is not generaly a problem with this one ! (that just an exemple but i know this cheese well , because it is the only cheese i've made with my parents )
