Ideally? A trans person hopes to transition well enough that no one has to think twice about what pronouns people use for them. But transition is not instant, it's awkward and difficult, so it's just polite to call people the pronouns they prefer after you learn what they are.

It depends largely on whether I respect them in general as a person and whether I think they embody the attributes of their preferred gender enough to believe that they're genuine in identifying with said preferred gender. There's a lot of people who do it for attention and I think that's just cynical social manipulation which I don't respect and won't pander to, but I think there are people (though very rare) who are inherently masculine personality-wise though born with a vagina or vice-versa, and in those cases I think it's reasonable to treat them as a man born with a female body or a woman born with a male body.
