I'm only 160lbs (so lightweight) but on day 1 of working out I was able to do 5x5 of just bodyweight. Currently can do 4x8 with 30lbs added (8 months later). Why do people find pullups/chinups so hard compared to other body weight lifts? Comparatively, dips destroyed me for a long time until I got way more practice in.

I'm that user, I did the Armstrong pullup program and it got me from 1 to 10 pullups but I hit a plateau. Now I'm following a pullup program that some Marine Corps recruiter designed, I'll give you a quick summary:
Amount of pullups you can do:
1-5 -> Do 50 pullups
5-10 -> 75 pullups
11-15 -> 100 pullups
15-20 -> 150 pullups
You can do the pullups in as many sets as you like but the sets have to be consecutive and you should rest 1 minute inbetween sets. The program is designed to also train your abs so you can do crunches when you rest

try adding weight. Also I've found that what's holding me back is often core strength because as the numbers go up my ability to maintain good form starts to drop.

i hope you don't care too much about the number of reps you can do though, the period of time that your muscle is continuously under tension matters a lot more. you'll get stronger doing 30 slow pushups (pausing at the top and bottom) than 60 fast ones where you just bounce up and down.
