There are plenty of good ones. Just no new good ones. Bamco has held every fucking anime license for the last like 15 years, and they found such insane success with naruto ultimate ninja storm that every single game since is some variation on it's arena fighting formula.

Licensed Shonen Anime Arena Fighters & Musous are basically Japan's equivalent to yearly sports games: annualized, iterative, and low-effort outside of some attack animations. Just like sports games, people buy them for the roster.
