Today was my 25th birthday and, among other things, I'm preparing a youtube channel on which I'll discuss, among other things, an esoteric and occult interpretation of Dark Souls.

Humanity is, in short, "the ability to choose darkness".

Drive, motivation, resolve, the will to go on, etc. Dark Souls is an absurdist gem about persevering in a harsh, pointless reality where the end result is ultimately the same. You're already dead, but you haven't gone hollow because you haven't given up yet.

But what’s the gameplay use? It doesn’t stop you hollowing and your character stays sane without it.

On the matter of Hollowing: I'll add that, form a metagameplay perspective, it's "the act of ragequitting". NPCs give up the fight because the world is too harsh, just like the player gives up the game because it is too hard. You can come back to the game and boot it again, but while you've been away you should imagine your character hollowed and crestfallen.
In narrative, the special power of the Chosen Undead is to always retain his sanity, because he is controlled by a supernatural entity -the player. Just like the gods possessed the "berserkers", bringing them to a death-defying trance.
On an esoteric level -what does a human do when he goes hollow? He loses his ability to choose.

In the intro the four special guys get Lord Souls from the flame. Gwyn got the Light Soul, the witch Life, and Nito Death. The furtive pygmy got Dark, and he became the ancestor of mankind.

So humanities are fagments of the Dark Soul that define man. It's the same icon/image as the boss souls you get but black. The game is called "Dark Souls" because Humanities are literally Dark Souls, and you use them to play online, which is the big hook of the game.

Think about it, other than being visually similar to the classic ring of light, in a gameplay sense it perfectly mirrors quitting the game. You could just die, respawn, and have a chance at redemption. Or, in the midst of all the action, you can decide it's all too much and throw everything away and make the time you spent truly meaningless.
