So I'm new this is like.. Day 6? 7? or something, and I was getting pretty into this game. Was slow at first, I reallly didn't care for the early story; but around 40s combat started to feel solid and with the higher job classes it felt great.
Next is supposedly 100 quests after the main story before I can start the expac? I really don't mind playing through these stories. However, my issue is that... (and maybe I'm the odd one out here) The main reason why I play MMOs is to learn and play my class so I can play with other people. The fun for me is to advance my class to it's optimal capacity, build on the muscle memory, etc etc etc...
BUT NOW I CAN'T DO ANY OF THAT? I can't progress my character in any substantial way (again the main reason why I play MMOs) with a lot still left to learn, and to my understanding a lot of the rotations later on are more obsolete from what I'm doing now, meaning I get a ton of filler with no character progression at all? Why? This would be understandable IF I were at a proper cap and had everything unlocked.
But I gotta tell you if anyone mentioned this type of gate I'd have considered this situation as a strong deterrent... especially with it being on a subscription service, as personally I do not find this gate respects my time. Which is even worse when I found a couple sources saying you can skip this content for a fee?...
I'm not super salty about this or anything but this is a massive "/sigh", and I'd have maybe avoided this or at least prepared myself going into it. But really for how many people sing the praises of this game there MUST be something I'm missing that can keep people drawn in despite this. Is there some sort of progression at level 50 that I'm over looking and don't understand?
I'm the type of guy who maxes my character in skyrim before I do story, then enjoy it as the endgame hero with all the skins and looks that I want my main to be.
Can someone please (preferably politely) point out what I'm missing?

Well I'm still in Heavensward, so not in my timeline.
its really slow and shitty until you hit level 50. At that point your chosen job gets a much fuller kit, make sure you do all your job/class quests too. Also bad move starting now the MSQ for ARR is really bad they are redoing it in the next patch

I assume you're referring to all the 2.X quests before you're able to start Heavensward. I'm not going to lie...It is going to be a slog and feel slow. One of the main selling points for FFXIV is the fact that it's a story-driven MMO. There are dungeons and trials you'll unlock and do while progressing the MSQ though. So that's something. If you already have Heavensward or bought the complete edition of FFXIV, you'll at least get experience for all the quests and dungeons you'll be doing. So you'll at least get to experience a bit more of the class abilities are you level up when not doing synced content.
