Because she's poorly written and the logic of her entire plan falls apart as soon as you play more than just her own route. It wouldn't even be difficult to fix her character, just adjust the reasoning for her actions. Something like needing to start a war and lure out the mole people in order to finally free Fódlan of their influence, but since Japs are creatively bankrupt they just went with the tired CHURCH BAD meme. When I started her route I expected her to be female Lelouch with her own "I'll become evil to vanquish an even greater evil" speech, but instead she just acts like an autistic child. It's disappointing as fuck, but coomers are easily pleased idiots and her being cute is good enough for them to excuse shitty writing.

As a person who has played the game and read developer interviews it comes down to her being rushed. Edelgard's route was supposedly never going to be playable until last minute and there'd be a big reveal that she was also going to be used like Byleth was going to be when it came to reincarnating Sothis. Edelgard is mainly hated due to her route also being poorly written and very hamfisted. The ending just ends after you kill the final boss on her route and you barely get to know anything that happens after it. There's no reward. Just confusion and bewilderment.
