What's unique about the dark soul is that it can be split without losing its power. Gwyn granted pieces of his lord soul to the four kings, Seath, etc, and it severely diminished him which is why he's such a pushover when you finally battle him.
The twin humanities are rare because the holder of the soul was in the process of splitting its humanity when it died. Whether it was giving birth or the mitosis thing the furtive pygmy did is not known.

As far as I can tell Humanity (The dark sprites you collect) are fragments of the Dark Soul, one of the lord souls spoken of in the intro of DS1. These fragments are bestowed upon mindless hollows aeons ago, which in turn turns hollows into, well, humans.
Gwyn fucks up this by cursing humanity (The race, not the fragments of the Dark Soul) with undeath because he wants to continue the age of fire. If humans can't die, they are more likely to collect souls which in turn make them more powerful and in turns makes them into better fuel for when they link the fire (Remember; The gods are manipulating humans into linking the flame)

If the humanity is a part of the dark soul, why is it black? The soul thar the pygmie acquires in the intro looks similar to the other Lord souls, just smaller.

Gwynevere is supposed to represent Lady Liberty. Anor Londo is basically New London i.e. Jew York. Ornstein represents Israel, Smough represents America. Both are teamed up to protect an illusion, a giant lady of liberty.
The darksign was the result of Gwyn branding the early humans during the dragon war with a seal of fire to contain the power of the Dark soul.
Specifically, he branded the Ringed Knights because they forged their weapons from the Abyss itself which "betrayed a smidgen of life". All of their weapons can emit a brilliant if short-lived flame and this terrified Gwyn because it was proof that the Dark Soul was more powerful than their Lord Souls.
Gwyn branded these knights with a seal of fire to contain their power, but this limitation caused their respective souls to go wild and eventually hollow. Unfortunately, since all dark souls are connected, Gwyn's seal of fire affected every dark soul bearer. It started with the knights, and eventually the clerics (who had to wear covers on their backs to limit the spread of darkness).

It's quantity over quality, yes, but the dark soul has its own set of powers. Manus inherited a large portion of the original Dark Soul because he was one of the original pygmies - the 'ancient human', or the predecessors of modern humans within the setting.
