Probably the original. Like 95% of the game would be fine, but the last couple hours would be complete nonsense without any context. It's still mostly nonsense anyway, but that's most Final Fantasy games.

I played the remake first and enjoyed it. Now I'm going through the original blind but I think I'm going to have to start over since I'm been missing a lot of shit. I don't have Yuffie at this point of the story because I thought you just got her normally from playing through the story.

You can get her at any point. Just walk around a forest area in the overworld and she'll show up eventually.

You can get Yuffie once you clear Gold Saucer. I know because I made the same mistake a couple days ago.

Yuffie appears randomly in all forest areas in the game, pic related. The first one is after the Mythril Cave but before Junon. The utmost left continent is completely optional and part of her personal quest.
Vincent is also optional, you'll have to do a safe puzzle in Cloud and Tifa's childhood town.

Technically you can't even have a single perfect run in FF7. A lot of dialogues change (sometimes a lot) depending on who's in your party at the moment. There's even mutually exclusive scenes depending on choices.
