I'd say get the GOG version for DRM-free alone. Or just pirate it, Carmack himself doesn't care. After that install either Quakespasm or Mark V. The GOG version also comes with Scourge of Armagon and Dissolution of Eternity i think.

Is quake champions fun? Might give it a shot

Quake is a great game if you learn how to aim. It doesn't require as precise aiming as in Counter Strike, but if you don't know how to aim it will be absolutely impossible to function.
