Odyssey uses dynamic resolution and it makes the game look inconsistent visually.
Also the art direction is generally better in Galaxy games but Odyssey does have some really fantastic art as well.

For one, really clever art direction. On the technical side, the use of small planetoids and their curvature allows them to aggressively LOD and cull faraway objects and throw more hardware at the on-screen visuals.

It doesn't, the only way Galaxy can compete with Odyssey is if you run it in 1080p on Dolphin, which requires much better hardware than the Switch to do.

Putting the issue of blurry-ass 480p aside, the reason Galaxy can do so much with the limited hardware is because of its design. Using planets was a really clever way to make most of the game empty space and keep down the amount of stuff you need to render at any given time. Plus, the pastel color scheme means that textures can be very low res but still look very good. And the cartoony aesthetic meant they didn't need the most complex geometry in the first place.

Hardware is still significantly better, the graphical increase wouldn't be enough, you could argue it's the art direction.

No, even on Wii it still lokks better because Odyssey's art style is so bad. It has no idea if it wants to be realistic or whimsical so the entire thing looks wishy-washy

This is incorrect though. Galaxy on Wii does not look better than Odyssey, the art direction is stronger than some of Odyssey's kingdoms (lake, new donk, etc) but Odyssey trounces it in others.

Now, in Dolphin at 1080p with AA and some other stuff enabled to improve image quality it's much closer. But on Wii? It ain't close.
