Personally I prefer the original, most of the new content isn't very good and glaringly out of place. However, it isn't a huge deal if you play the remake over the original, since nothing was removed or altered, just new stuff on top of the intact original experience.

IMO there's no real reason not to just play Redux. If you want to ignore the new content you can, but the new endings are pretty cool and the side dungeon has some of the better layouts in the game to go through.
Original has better portraits, medals and Space Yukiko doesn't interrupt the original story

The new dungeon was pretty dope though. Yukiko from Persona 4 wast even bad desu. A bit undercooked but could have been worse. Could have been Marie or whatever her name was from P4G

redux on hard mode was a lot harder than I remember the original being, which didn't feel like much of a step up from Nocturne in terms of damage you take
Whichever you can get for cheapest if you are a buyfag, otherwise it doesn't matter just make sure you play it.
And those suits are my favorite sci fi suits ever. God damn are they so good.

Thanks everyone for the suggestions. I have a lot of down time at work these days, so I figured that a dungeon crawler would be just the thing. I'll probably have to buy it, seeing as how I can't emulate on my workstation.
I'd say Redux, the new portraits are a bit uglier, but the new content is mostly good, even if some of it feels a bit out of place, and some of the QoL changes are really nice, particularly the app that shows you where a teleporter leads to. It's not as convenient as EO's map making, but it makes navigating some of the later dungeons much more enjoyable than it was in the original version despite the dungeons themselves being unchanged.
Enjoy it. It is one of my favorite games. Love the setting, atmosphere, and premise.
The new one makes the story worse but the huge amount of QOL changes is a must. It takes literally half as long to beat compared to the original due to how much they increased the speed of everything.

The app that automatically reveals doors near you alone would make it painful for me to go back to the original. I don't think I have it in me to autistically sidestep across every single wall hoping to stumble upon whatever gate is needed to progress the dungeon.
The new apps make navigating and battling less of a pain. There's one that tells you where you're about to teleport, which makes Eridanus less of a mess. Commander skills also give MC something else to do besides throwing life settings all day.

The Womb of Grief are pretty rough dungeons to navigate in terms of mechanics so it felt decently true to form for Strange Journey, but the final boss isn't as hard as Meme Aleph

I like the little achievements and medals you could get, really wanted to get them all but you have to replay the game like four times to do it.
How is this game in terms of how much freedom you're given to customize your party, or ability sets?
hundreds of demons to recruit and fuse into other demons, stats are pretty rigid (and irrelevant for MC) but spells can be passed down through fusions allowing for lots of customization, not as much as in other titles but there's plenty there still
