Hitman 2016/2018.
Those games get overlooked a lot when talking about art direction. These massive, sprawling sandboxes with excruciating details that most players will never even notice. They have some of the cleanest graphics, and they are extremely polished.
And if course, they're just beautiful to look at.

That would be Void (the original release) and Planescape Torment. The first is very unique in its artstyle and presentation, while the second's one is not as quite unique as it is very subversive when it comes to portraying fantasy stuff that's expexted to look obvious and generic by the audience, both visually, narratively and mechanicaly.

with the right shaders they look perfect. just need to get the 3d model resolution and blending just right
