As much as I'd like it there probably won't be a fist weapon with a proper martial arts moveset. Unarmed exists already and has skills for it and damage modifiers on equipment.

If you're using a lot of ninjutsu then that's a perfectly good idea
If you're not using ninjutsu much you might be better with Monkey for Feral
Yatagarasu gives very high Anima recovery on gun headshots
Tengen has the strongest combat bonuses in the game by far although you're limited to Phantom
Saorise has a ridiculously large plaedies buff on GS attack which is the best way to use YS
The rest are more niche.

Tengen Kujaku is the best spirit in the game overall. The Stance bonus alone makes it worth using even if you don't use elemental buffs.

It is not really gimping in single player since they do more ki damage cost of more damage but works well. In expeditions everything has so much ki though.
