It sold 2.5 times as much in Japan than FF7R on a console with half the install base. Original FF7 sold 2m in Japan on the first day, when there were only 5m PS1's sold in Japan. Needless to say it's a very popular IP in Japan.

This has nothing to do with the chinese virus. Animal Crossing has never been even remotely that popular, especially on home consoles. It's all to do with Switch being hugely popular with women and bugmen, the biggest and most braindead coomsomers who easily fall for every marketing trick. Pretty much every nintendo 1st party franchise is beating records on Switch, with a fairly small install base, at least compared to Wii and NDS/3DS/GBA. It's not like these new installments are doing anything much better or revolutionary, so why are they suddenly so much more popular than they ever used to be? You could say that these franchises grew in popularity over time and that's certainly true, but Wii U proves that this isn't the reason for them selling so well.
