Apart from the supposed good writing of Morrowind( meaning walls of text, with practically no context, and very vague sometimes contradicting evidence) What makes people so obssesed over this, acting like it's the only good TES game. Ulfric's endgoal is to be acknowledged as the second coming of Talos, which, by the way mantling works, if he can keep up the act himself, would merge him with Talos. By the time the game starts though that plan's already fallen apart. The fact that he's Ulfric Stormcloak instead of Ulfric Stormcrown, Dragon of the North, is proof of that.
Basically, the big reason for the falling out between Ulfric and the Greybeards is Ulfric tried to have them crown him as the Dragon of the North, or more importantly, Stormcrown. The Greybeards said no. He spins it as "they abandoned their people [by not naming me Stormcrown]." So he uses the name Stormcloak instead. In Nordic culture, having "Storm" as part of your name is a big fucking deal because that implies you are associated with Talos in some form, with Stormcrown meaning you are Talos. With a name like Stormcloak, Ulfric is tying himself to Talos in a very intimate manner, but because the Greybeards told him to fuck off, he can't just straight up use Stormcrown. Only TLD can.
