Wet surfaces only hinders climbing cliff faces though. Those towers can be climbed without any issues.

There are some towers that require you to climb rocks and wooden scaffolding, both of which become slippery in rain.

It's just a random inconvenience right? I'm much rather have a mechanic that makes me adapt at the cost of it hindering my progress if I roll bad dice.

Pretty simple, really.
It rains as often as it's clear, if not more. Nobody's condemning the game, it's just annoying to have to either put the controller down or waste items to progress yet another weather cycle when you're already at the thing you need to access.
Can't make a campfire if it's raining, and sometimes there isn't adequate shelter.
Use wood and a fire weapon (or flint) to create a campfire to advance time.

Not really, people can find fault even in the games they love. For example, I love FF6 but the encounter rate is aids.
