I'll agree with the others and say GZDoom is pretty good. However, the creators of GZDoom made a few bone-headed design choices, or at least choices that I don't really understand. Jumping, vertical aiming, and even crouching are all enabled by default. Moreover, although you can disable them in the settings, these particular changes won't be saved in your settings file (gzdoom.ini). I suppose you could disable these features in ways that do get saved to that file, such as simply unmap jump and crouch, and maybe reducing vertical mouse sensitivity to zero or something, if that even works. But if you want the actual jumping, vertical aiming, and crouching options to be toggled "off" when starting GZDoom, you'll need to create an autoexec file which sets some flags. But even this is a pain in the ass because, if you want to play DOOM (no vertical aiming and no jumping), Heretic (vertical aiming but no jumping), and Hexen (vertical aiming and jumping) all with the correct settings, you'll need an autoexec file for each game. Holy shit why is it like this?

Anyway, here's my setup (see image), which has vertical aiming disabled for DOOM, jumping disabled for DOOM and Heretic, and crouching disabled for everything including Hexen.
