Blizzard-Activision was the first public sign, I think it was a just a slow change in attitude from 'what do the players enjoy' to 'how can we make more money off our players'.
Then there's a natural evolution from that to 'what will keep the shareholders happy so we'll keep being fed money' and that's around the time the company fully enters into decline.

The intrigue that appears in news is far from a regular occurrence, and extremely unlikely for a newb to get involved in beyond being a rank and file member of one of the larger clans.
My first month in Eve was spent training into mining frigates, then learning all the secondary skills as I passed the time slowly mining up asteroid belts.
They made some Quality of Life choices, mainly in the form of creating Skill point implants that players create using their own skillgains, and an unlimited skill queue if you're subbed, but damned if I actually want to play it again.
Your first month will likely having you run PvE encounters to get a feel for the combat system as you train up your skills up.
There might be a friendly PvP clan you could find and join though, I got invites to several during my time.

Shadowbringers has the best story the game has seen yet, probably one of the best in MMOs. The endgame is lighter in combat content than Stormblood (less dungeons, no deep dungeon), but it has more crafter and gatherer content
