What stage of the game are you at? Early on, just train with Captain Bernard and avoid actual life-or-death fights with bandits until you improve your skills and get good gear.
What this user said, bt deff go to the trainer thus games combat is deeper than it seems and the trainers help to learn it.
Also getting better gear/stats helps a bit.
If I remember correctly, there are things you just can't do until you have progressed a bit. Train with Captain Bernard as soon as you are able.
Learn perfect block and master strike from Bernard.
Get that perk that increases your chance to win clinches by 40%, got REAL old REAL quick fighting more than one guy and then one of them just wanted to get behind me and push me around the whole fight.

Also, if you really want to cheese the game, just look for the treasure chest locations. Some of them don't require lockpicking and have end-game plate armor and swords inside.
Follow the story until you can train with Saint Bernard and then just practice until you get a bunch of skill levels. It honestly breaks the game, it goes from impossible to easy mode.
Don't engage in any 1vX situation, 1v2 if absolutely necessary. Do the training, learn to use a bow, being able to land one or two arrows before melee can make a difference.

I got the royal edition and those dlc map but didn’t used them yet. I’m afraid of going out and die and losing hours of game time

Then you're barely an hour into the game and shouldn't be fighting anyone yet. Keep following the main quest until you get given a horse, you meet him just before that iirc.
1. Try to ambush as much as you can.
2. Tell Archery to go fuck itself
3. When in doubt; stab it out.
4. Axes and Maces + aiming for the head = win[ing]
5. Avoid groups of 4 or more people. There's a bug in the current build that will have them neigh-unbeatable in most cases.
6. If your on the PC; get the mod for quick herb picking and start plucking merrigolds and shit to make Savior Shnappes and Merrigold potions. They won't make the game a cakewalk but money and fast post battle healing DO help.

How can I do a stealth/backstab kill?
A perk in the stealth skill.
Stealth is for cunts and barely works. Even when the game forces you; don't bother.
What about wanted level in towns? Do they go away or I should pay/go to jail?

The game is only hard in the early parts, once you get to the middle or end of the game you can win against 3-5 opponents easily.
I love poisons. Just throw something in the pot when nobody's looking.
Stealth is Skyrim levels of broken in this game though
The combat is good. After a few hours you will destroy everybody on one on one. But later in the game i had many encounters with 4-6 enemies. That's where I dropped the game.
Here's a tip. Use a mace. It hits everything just as hard. Cloth, leather, plate, doesn't matter. One bop to the head and people go down.

I absolutely love this game, but they bit off more than they could chew with it being funded through Kickstarter. One of the goals was 'playable female character' but they ended up shafting that to focus on a more story driven game with Henry until the god-awful Woman's Lot DLC.

This isn't Skyrim user. You aren't going to be finding a dungeon infested with goblins for epic loot. The world is mostly empty forest with the occasional bandit camp sprinkled in, which as you admitted you can't handle.
So what can I do? Going for the main mission's?
What about these firsts secondary quest that requires hard lockpick skill?
