They get completely different storylines and item progression.
Chris gets the better shotgun first, but Jill can get the basic shotgun earlier.
Jill gets a lockpick that can open any simple lock, Chris has to search for small keys.
Jill gets two more inventory spaces, Chris gets a stronger knife.
The only way you would know they were any different is if you beat the game and decided to try it again as the other character. Or if you read it online and then felt the need to complain about it because you're a whiny faggot.

I would play on hard mode if that means tougher enemies. I wouldn't play on hard mode if that means having a smaller inventory.
That being said a lot of games from this era were much more obscure so I don't want to be too hard on RE1
