the eternal problem with replacing that game's models, especial field models, is that the animations were designed with the original deformed models in mind, so you replace somewhat charming deformed characters with better looking ones with super janky animations.

I don't know about that. I readily admit that I haven't seen much from it, but I checked it out once out of curiosity, and a dumb mistake from the original (a guy in North Corel calling Barret a technofreak because the translator confused デク with テク, and the fan translators clearly didn't catch it either). I think that "A gun is a MAN'S weapon! Ain't nuthin' else'll do!" was still in there too.

The new translation is dry and SOULLESS as fuck. The new models don't work, partly because their sizes aren't properly fit to the backgrounds and partly because the animations for field models are incredibly basic and made for the super blocky chibi models in mind, meaning it looks really really shitty when you replicate those animations with a good model. The 60fps interpolation doesn't look great on quite a few battle animations.
Remako is nice though. Not perfect, but nice.

The PC version was already cleaned up in translation though. All the re-translation mod does is comb over all the dialogue, strip out some flavor, fancify it and pretend it radically changed everything when it just reworked some of the messier stuff and even changed canon item names.
I would actually really love to go through Final Fantasy VII's text and create a sort of compromise between Reunion's retranslation and the old flavorful localization. Something that keeps the original game's pizzazz intact while also making for a coherent translation that doesn't make really dumb mistakes half the time. Is it hard to edit FF7 text, do I have to learn programming or some shit?
