Everything looks clearer first of all. You can distinguish objects by the material they are made of. It doesn't look like scramped together playdooh.

Because BotW was made for worst console in history of vidya that's underpowered and a handheld. They sacrificied graphics for hideous art style to gain some FPS.

Both graphics are bad. In the case of Pine its intentional, so it looks like BotW. In the case of BotW its switch limitations.
Point being even older Zelda games look much better than Breath of the Wild even with completely outdated graphics.

Breath of the Wild is open world and only has 4gb of memory to work with.

Sadly Zelda won't look this "good" until 2030 at earliest.

Look at those trees, are those cardboard cutouts?
Look at the grass, is it grass or green water?
Look at Link. Is there a difference between his shield and that plane thing he's flying with?
Is the shield made out of linen? Is that flying plane made out of steel? Hard to tell.

looks better. There is no point for making graphics intentionally bad. So there is no point for any game developer to make a similar looking game when you can do better. Unless of course you deal with limitations like in the case of BotW.

The game's graphics are definitely subpar but it was built for two consoles and had almost ten years in development cycle.
