This came from a dev diary specifically about the gameplay settings where you can change the number of homos, stronk womyn etc that will appear. It's to give us options between historical accuracy and BBC period piece style depictions, and CK2 had something similar. They added bi and asexual instead of just straight and gay like in CK2, so that's why the picture was there. CK2 also had childhood events where you could discover that you were gay, although that was usually up to player choice. It looks like it's random in CK3.

All religions/faiths are playable in the base game, and you can make custom ones.

From what they've said, same sex relations are frowned upon or straight up criminal by default in most default religions in the game.

You know why all this sexual identity shit is being pushed kids at such early ages now...it's so they can say young, prepubescent kids are 'well informed' and can 'make their own decisions' regarding sex and sexuality to use as a wedge for when they eventually grow the balls to try and push for normalization of pedophilia and ephebophilia.
