On my first playtrough I thought the humanity thing is more of a light side/dark side thing just as in kotor2 so I ended up with min humanity and the only option left was to open the sarcophagus.

Low humanity Gangrel is probably the most fun I've had in this game. If you're interested in mods then playing a high humanity Salubri in The Final Nights is pretty fun. Their signature clan discipline allows for some neat high humanity choices.
Also don't be too cheeky towards the prince after you've gotten the Skyline apartment. He can permanently lock the door if you behave shitty enough towards him and everything you've stored inside is unacceptable.

Toreador doesn't have dominate. They have Presence but it works the same during dialogues. Basically you're too cool and beautiful for them to say no.
With dominate you're basically just mind controlling them to say yes.

Honestly just read the clan descriptions and choose what type of vamp you wanna roleplay, the questionnaire isn't always the best way to pick. If you like the sound of vampire blood mages you should stick with them though. Some male models look retarded yeah, you can either install skin mods or choose the female versions.
